This quick dish combines crispy salmon cubes prepared in an air fryer with aromatic spinach, eggs and creamy avocado. The dish is finished with cherry tomatoes, Parmesan and black sesame, which give it a rich flavor and interesting texture.

3 eggs

1 avocado

a handful of cherry tomatoes

2 tablespoons grated Parmesan

1–2 tablespoons sesame sauce

1 tablespoon tonkatsu sauce

Preparation
1. Preparing the salmon cubes
Drizzle the frozen salmon cubes with olive oil and coat them in tonkatsu sauce.
Place them in the air fryer and cook:
9 minutes at 180°C
The cubes should be lightly browned on the outside and juicy inside.
2. Preparing the vegetable base
Heat the olive oil in a wok pan.
Add:

chopped garlic

fresh spinach
Sauté briefly until the spinach reduces in volume, then add the sesame sauce.
3. Adding the eggs
Crack the eggs directly into the wok and gently mix them with the spinach.
When the egg whites start to set, add:

cherry tomatoes, cut into pieces

grated Parmesan
4. Combining the ingredients
Finally, add the baked salmon cubes and gently mix.
5. Finishing the dish
Before serving, sprinkle over:
