The black cod (Pollachius virens) is a lean marine species valued for its light flesh, mild flavour and firm texture. The presented product is a 7.5 kg block made from skinless fillets (BS, PBO), intended for food processors, distributors and export partners seeking a stable and standardised frozen fish raw material for industrial applications.
Each block is produced exclusively from wild-caught saithe harvested in accordance with EU Regulation 1379/2013. The fish is manually trimmed, deboned and shaped, then packed in a liner and carton and deep-frozen below –18 °C to preserve the natural structure, nutritional value and colour of the meat.
Processing and Quality Standards
The production process follows strict EU food-safety and quality control procedures.
Filets are carefully inspected for uniformity, colour and texture.
Acceptable natural deviations include:
-
Single bones ≤ 1 piece / kg
-
Slight discolouration or congestion ≤ 4 pieces / kg
Unacceptable: off-odours (musty, ammoniacal), slimy texture, or deep dehydration.
The block surface is smooth and clean, the colour naturally light, and the aroma characteristic of fresh codfish — confirming correct freezing and raw-material handling.
Microbiological and Chemical Requirements
Complies with Regulation (EC) No 2073/2005 on microbiological criteria for foodstuffs:
-
Total aerobic colony count ≤ 5 × 10⁵ cfu/g
-
E. coli ≤ 10 cfu/g
-
Sulphite-reducing anaerobes ≤ 1000 cfu/g
Chemical parameters (Reg. 1881/2006):
-
Lead (Pb) < 0.3 mg/kg
-
Cadmium (Cd) < 0.05 mg/kg
-
Mercury (Hg) < 0.5 mg/kg
No polyphosphates added.
Non-GMO product in full compliance with Regulations (EC) 1829/2003 and 1830/2003.
